Oats Upma







Ingredients :


2 Cups of Oats
2 Onions, chopped
3 Green chillies, chopped
1/2 sp Mustard seeds
1 sp Dry Red chillies
2 sp Urad dal
2 sp Chana dal
2 sprigs of Curry Leaves
1/2 Cup Mixed Vegetables, Boiled and Chopped ( Carrots, Beans, Cauliflower etc )
Water as per the necessity
Salt, as per your requirement
2sp Oil



How to make it :



    Heat oil in a kadai, add mustard seeds, chana dal, urad dal, dry red chillies, curry leaves. Saute for 10 minutes. Add chopped onions, chopped green chillies, mixed vegetables and fry till onions are golden in colour. Add water, salt. Mix well and boil.  Add oats and mix well with a spatula so that lumps are not formed. Simmer till oats are done. Serve hot with tomato chutney.

Corn - Mushroom Curry









Ingredients :



2 Onions, chopped
500g Mushroom, chopped
200g Boiled corn
4 Tomatoes, chopped
2sp Ginger-garlic paste
3 Green chillies, chopped
2sp Red chilli powder
2sp Dhania powder
2sp Jeera powder
1sp Haldi
1 bunch Coriander, chopped
Salt, as per your requirement
2sp Oil



How to make it :



    Heat oil in a kadai, add the chopped onions, ginger-garlic paste, chopped green chillies. Fry till onions are smooth. Add red chilli powder, salt, haldi, jeera powder and dhania powder. Saute for 10 minutes. Add chopped tomatoes and fry till oil seperates and floats in the kadai. Add boiled corn, chopped mushrooms.
Simmer till mushrooms are done. Garnish with chopped coriander leaves. Serve hot with Roti/ Rice or Pitta bread.

Cabbage Poriyal

                 Cabbage Poriyal is a popular dish of southern part of Tamilnadu and Kerala. It is very easy to make and good for health.





Ingredients :

1 Cabbage, chopped          

1 spoon of Urad dal                
     
1 spoon of Mustard seeds              

4 Green Chillies, Sliced      

2 Dry red chillies               

Curry leaves, a handful                 

1/2 spoon of Turmeric powder             

4 spoons of Coconut, grated              

Salt, as per your requirement

Oil for frying                                

1/4 cup of Water                           



How to make it :


    Heat oil in a pan, add mustard seeds and urad dal and fry for 5 minutes. Add sliced green chillies, red dry chillies, curry leaves, turmeric powder and mix. Fry for 5-7 minutes. Add chopped cabbage, salt and mix well. Add 1/4 cup of water and simmer till cabbage is tender. Add grated coconut and mix well.

Christmas Cookies

                        Enjoy the festive season with this yummy cookies.




Ingredients

50g - Almonds
50g - Hazelnuts
280g - Plain Flour
70g  - Caster Sugar
Pinch of salt
200g - Butter
2      - Egg Yolks
1/2 cup - Icing Sugar



How to make

Grind the nuts very finely or crush with a rolling pin. Sieve the flour onto a large baking bread. Place the ground almonds, hazelnuts, caster sugar, salt, small flakes of cold butter and egg yolks in the middle.

     Bring all the mixture together with your hands and knead into a dough. Wrap the dough in aluminium foil and leave to rest in the refrigerator for 2 hours. Pre-heat the oven to 190 C. Divide the dough into about 4 pieces and roll each piece into a log 1/2 and 3/4 inch thick. Cut the log into pieces about 2 inches long. Bend each piece into a crescent and taper the ends. Place on a baking sheet and bake in the middle of the oven for about 10 minutes until golden brown.

     Mix together the orange rind and icing sugar. When the cookies are cool enough to handle, dredge each cookie in the sugar mix. Tap off any excess and leave the cookies to cool on a wire rack.

Basic Mutton Curry






Things to Use

1Kg Mutton, chopped

4 Onions,chopped

3 Green chillies, sliced

4 Ripe tomatoes, chopped

2sp Turmeric powder

3sp Garam masala powder

4sp Ginger - garlic paste

Salt and red chilli powder as per your requirement

Chopped coriander leaves for garnishing

4sp Oil for frying



Method


Mix mutton pieces, ginger - garlic paste, turmeric powder, red chilli powder in a pan. Don't add salt as the mutton doesn't cook properly with it. Marinate for 30 minutes. Heat oil in a pressure cooker. Add chopped onions and green chillies. Fry till onions are golden in colour and are soft. Add marinated mutton and mix well. Cook for 10-15 minutes. Add chopped tomatoes and cook for another 5 minutes. Add 2 cups water ( Don't add more water as some water already comes out of mutton ). Close the lid and pressure cook till 4-5 whistles. Remove from the fire and keep aside till the pressure is gone and you can open the lid easily. After you open the lid, mix well and bring it back on the fire. Simmer for 5-10 minutes. Add salt, chopped coriander leaves, garam masala powder and mix well. Serve with hot rice or chapatis.

Tomato Masala Curry


A simple and delicious tomato curry which can be served along with chapatis or rice.








Things to use



4-5 Ripe tomatoes, chopped

3 Sliced onions

3 Chopped green chillies

2sp Ginger-garlic paste

1sp Turmeric powder

Salt and red chilli powder as per your requirement

2sp Garam masala powder

2sp Oil

Chopped coriander leaves for garnishing







Method



Heat oil in a pan. Add onions and green chillies and fry till 10 minutes or till onions are golden brown in colour. Add tomatoes and cook till oil floats on top. Add ginger-garlic paste, salt, turmeric powder and red chilli powder and let it simmer for a few more minutes. Lastly, add garam masala powder and mix well. Cover the pan and cook simmer till the tomatoes are well cooked. Add little water if want more gravy. Garnish with chopped coriander leaves. Serve with hot rice or chapatis.
